Absinthe La Fée Parisienne is distilled by the French distillery Cherry Rocher in the Rhône-Alpes region, according to a traditional recipe using nine botanicals, including wormwood, fennel, mint, and coriander. The herbs are first macerated and then distilled in small vessels, in keeping with the history of absinthe. Meanwhile, a coating is added to the bottle to prevent UV rays from penetrating. This helps preserve the green color of the liquid inside, which can be affected by exposure to sunlight.
The color is bright lime green, which is a completely natural shade from the herbal macerates. The aroma is a complex blend of sweet and spicy aromas - between fennel, coriander, wormwood, and a herbal base. When water is added, notes of white mint and licorice appear.
The taste has an intense introduction with aniseed sweetness, gradually developing Italian spices such as coriander and star anise, a slight touch of ginger, intertwined with mint tones. The finish is long and smooth, with hints of tobacco, herbs and a hint of vanilla and sweet spices such as coriander.
La Fée Parisienne is best enjoyed in the traditional way – 1 part absinthe diluted slowly with cold water (approx. 4–6 parts), over sugar on a spoon – which leads to the desired louche, a milky cloudiness and the release of aromas. This method of preparation takes you right back to the era of impressionism and the creative nights of Paris. Although there are mixed opinions in the community about its current quality, many people like La Fée as an affordable and stylish absinthe for home rituals.
