Absinth La Fée Parisienne is distilled by the French distillery Cherry Rocher in the Rhône-Alps region, using a traditional recipe that employs nine botanicals – including wormwood, fennel, mint, and coriander. The herbs are first macerated and then distilled in small vessels, with respect for the history of absinthe. Meanwhile, the bottle has been treated with a coating that prevents UV light penetration. This helps preserve the green color of the liquid inside, which can be affected by exposure to sunlight.
The color is a vibrant lime green, which is a completely natural shade from the herbal macerates. The aroma is a complex blend of sweet-spicy notes – between fennel, coriander, wormwood, and an herbal base. Upon adding water, notes of white mint and lollipop emerge.
The taste has an intense introduction with anise sweetness, gradually developing Italian spices like coriander and star anise, a mild touch of ginger, intertwining with minty notes. The finish is long and smooth, with hints of tobacco, herbs, and a touch of vanilla and sweet spices like coriander.
La Fée Parisienne shines traditionally – 1 part absinthe slowly diluted with cold water (about 4–6 parts), over sugar on a spoon – leading to the desired louche, a milky opalescence, and the release of aromas. The preparation method precisely takes you back to the era of Impressionism and the creative nights of Paris. Although there is mixed opinion in the community about the current quality, many favor La Fée as an accessible and stylish absinthe for home rituals.
