Bairnsfather Rose Bitter Absinthe is an original Czech absinthe with 55% alcohol, combining classic absinthe tradition with a subtle fruity charm in the finish.
Production takes place in the Czech Republic, where traditional absinthe is primarily made by macerating a herbal blend – wormwood, green anise, and fennel – in high-proof alcohol and then distilling it. Bairnsfather was the first to introduce the "Bitter" variant with a thujone content of 32–35 mg/kg, which significantly enhances the bitter herbal layer of the absinthe.
What truly sets this absinthe apart is the unusual second maceration - not with herbs, but with a colorful blend of natural fruits. This innovative approach gives the drink a complex fruity flavor and aroma while ensuring a 100% natural red color.
The aroma is dominated by intense herbal and spicy notes – wormwood with a pronounced herbal aroma, complemented by hints of anise and fennel, which underline the traditional aromatic structure of the absinthe. It is typically dry, refreshing with a smooth herbal presence.
The taste is bitter, with a pronounced increase in the wormwood base and spicy notes. The structure is robust, full of herbs, without a pronounced sweet background, but with a fruity aftertaste.
Alcohol content is 55% ABV, with the maximum allowed thujone content, which enhances the typical bitter taste of absinthe. It is intended more for connoisseurs who prefer traditional dryness and a pure herbal palette without sweet or fruity elements. The ideal serving is dilution with ice-cold water (the classic “louche” effect), or as part of absinthe cocktails.
