The GlenAllachie 11 Year Old Palo Cortado Sherry Cask is a distinctive Speyside single malt Scotch whisky, showcasing the finer and richer side of sherry casks. This edition is part of The Wood Collection and is based on aging in Palo Cortado sherry casks, which blend the aromatic elegance of Amontillado with the fuller structure of Oloroso.
The use of puncheon and hogshead casks brings a layered character to the whisky with fruity depth, darker sweetness, and a subtly spicy expression. The nose reveals cinnamon, butterscotch, damson plum, heather honey, raisin butter, and candied ginger.
The palate is rich and warming, with notes of toasted honeycomb, forest fruits, baking spices, maraschino cherries, mocha coffee, plum jam, molasses, and chocolate. The result is a complex, sherry-influenced whisky with an elegant fruity-spicy profile, perfect for slow sipping neat or with a few drops of water.
