This limited edition rum from Don Papa: Sevillana Casks is distilled on the island of Negros in the Philippines. The exceptional climate and volcanic soil contribute to the richness of the sugarcane, which grows on the highest peak, Kanlaon.
After harvesting, the cane is crushed in one of the local mills, and the molasses, known as black gold, is distilled in column stills before being stored in oak barrels.
This small batch edition is first aged in ex-bourbon barrels for 4 to 12 years and then transferred for three years into two types of Spanish barrels - Oloroso sherry barrels and Andalusian vino de naranja barrels (orange wine barrels). These barrels are also used to produce a local unique specialty, Seville orange liqueur. It is bottled at 40% to achieve optimal flavor.
