Dalmore Constellation 1980

Dalmore Constellation 1980 Cask No. 2140 is an exceptional 31-year-old single malt whisky from the Highland region and one of the few examples of Dalmore whisky that remained in a single sherry cask throughout its entire maturation period.

The distillate was stored in a Apostoles Oloroso Sherry Butt No. 2140. The cask previously contained rare 30-year-old Apostoles sherry from the renowned Spanish bodega González Byass, with which the Dalmore distillery has a long-standing partnership. Over 31 years, it imparted a rich mahogany color and a layered fruity-spicy character with notes of oranges, mangoes, almonds, and caramel.

The aroma opens with fresh oranges, mandarins, and lemongrass, complemented by ginger spice and spicy coffee. The palate brings ripe bananas, marzipan, and orange peel, followed by pear flesh, crushed almonds, ginger, and caramelized apple.

The whisky was bottled at a natural cask strength of 52.1% alcohol, without chill filtration and in its natural color. Only 227 individually numbered bottles were produced from the cask, making it an extraordinarily rare collector's edition. It comes in luxurious gift packaging.
