Dalmore Constellation 1979 Cask No. 594 is a rare 33-year-old single malt whisky from the Highland region. It represents an exceptional example of how time and the right cask can create an elegant, complex, and still vibrant whisky.
The distillate spent a full 33 years in warehouse No. 9, maturing in a single hogshead cask No. 594. The cask was made from American white oak Quercus alb sourced from the Ozark Mountains in Missouri, USA. The wood allowed the whisky to develop at its own pace, gradually imparting notes of apples, peaches, vanilla, and lemongrass.
The aroma combines honey with peaches, nectarines, and vanilla ice cream. Fresh apples, pears, apricots, and lemongrass follow. The rich flavor brings spicy pineapple, tropical fruit salad, caramel fondant, and lemon cake. Gradually, almond cream frangipane, rosehip syrup, macarons, Bramley apples, peaches with cream, Turkish delight, and kiwi are added.
The whisky was bottled at a natural cask strength of 48.5% alcohol, without chill filtration and in its natural color. Only 199 individually numbered bottles were produced from the cask, making it an extraordinarily rare collectible release from the Dalmore Constellation collection. It comes in luxurious gift packaging.
