Rum Mezan Guyana Diamond 2003 comes from the legendary Diamond Distillery in Guyana, where it was distilled traditionally using wooden pot stills and column stills, originally from the Versailles Distillery. Distillation took place at a relatively low strength, which is typical for the Demerara style, and the distillery's original yeast strain was also used. The producer adheres to the philosophy of "The Untouched Rum," meaning no added colors, sugars, or filtration.
The rum was aged exclusively in ex-bourbon barrels made of American white oak. The process took place in two phases - first tropical aging in Guyana, then continued aging on the European continent, which allows for a gentle maturation of aromas and flavors with a richer character.
The aroma of this rum is complex and elegant, with notes of dried citrus fruit, tobacco, sweet warm wood, vanilla, and honey. The taste contains delicate esters with a hint of spice - cloves, cinnamon, and a subtle oak undertone. Citrus notes are added to this.
This rum is ideal for drinking neat at room temperature, where its layered aromas stand out the most. It also stands out in combination with dark chocolate, roasted almonds, or mild cigars.
