Rum Mezan Guyana 2005 was distilled in 2005 at Diamond Distillery (Guyana) using the iconic Port Mourant Double Wooden Pot Still - a unique aluminum distillation system preserved from the former Port Mourant distillery and moved first to Uitvlugt and then to Diamond. This technology produces distinctly pointed, ester-rich distillates with a characteristic ester expression.
The rum ages for approximately 10 years in ex-bourbon barrels made of American white oak, first in the tropical conditions of Guyana and then continentally in Europe. This process allows for a smoother golden color, showcasing the rich character of the Port Mourant distillate, while remaining free from coloring or sweeteners - typical of the "The Untouched Rum" philosophy.
The aroma of the rum is complex, with initial impressions of freshness - green pepper, menthol, sweet bananas, strawberry notes and a subtle hint of clementine. The taste is spicy and tropical - a combination of ginger, pepper, banana, lime, with finishing touches of mint and oak.
This rum is suitable for slow sipping neat; some tasters find that the aromas open up fully with the addition of a drop of water.
