Cubaney Exquisito 21 is the flagship Dominican rum from the family brand Oliver & Oliver, aged for approximately 21 years in the Solera system. This process combines American bourbon and French wine barrels, creating a dark, mahogany distillate with a complex character that surpasses typical mid-range rums.
The production process begins with fermentation from molasses, followed by aging in oak barrels of various origins under tropical conditions. In the Solera system, older and younger rums are gradually blended, and although the oldest component is 21 years old, the resulting blend has an average age of approximately this time.
The aroma is dominated by sweet caramel and brown sugar, complemented by notes of dark chocolate, orange, crushed almonds, and a subtle smoky veil. The overall impression is rich and elegantly spicy.
The rum is strong and intense at first, but later becomes smooth and balanced. The palate reveals caramel, vanilla, chocolate and hints of tobacco and old leather – the character is imparted by the cask components and long aging. The finish is long-lasting, with distinct notes of cigar boxes and leather.
The bottles are filled with 38 % alcohol and have a volume of 0,7 l.
