Papa's Pilar Rum
Sir Edmond Gin
Santos Dumont Rum
The Whistler Whiskey
Papa's Pilar rum is inspired by Ernest "Papa" Hemingway and his beloved ship Pilar.
Papa's Pilar is a rum that is designed to combine the art form of blending different international rums with the science of cask distillation and processing, capturing the essence of its namesake - Ernest Hemingway.
Papa's Pilar rums are made from different rums that are blended and aged together. The rums come from Barbados, the Dominican Republic, Venezuela, Panama and Florida.
Sir Edmond is an affordable gin that will shatter all your preconceptions and make your taste buds dance with its irresistible vanilla flavour after the first sip. It is precisely infused with bourbon vanilla, which comes from the island of Reunion, where it is grown by local farmers without the aid of any fertilizers or pesticides.
It has a distinct vanilla aroma with notes of citrus, spice and juniper that will take your breath away with awe. The gin takes its name from Edmond Albius, who pioneered the method of rapid pollination of vanilla flowers.
When the name Santos Dumont is mentioned, all innovation and invention enthusiasts are instantly alert. And especially fans of aviation. After all, the name of the Brazilian rum brand Santos Dumont is firmly linked to one of Brazil's most interesting inventors - Alberto Santos Dumont.
Brazilian plantations are still the largest producers of cane sugar today and owned by the Santos family (probably Alberto's relatives on his mother's side). Santos Dumont rum, like Alberto, is exceptional and carries something typically Brazilian. It is known as a sweet, aromatic and well-aged rum whose special feature is that it is also blended from the typical Brazilian cachaça (cane juice spirit).
Boann Distillery is located in Drogheda, Co. Meath, in the heart of the Boyne Valley. The distillery is part of the Origin Green initiative and operates a closed water system, recycling all of its incoming water and the heat generated helps to run the packaging lines, restaurant, visitor centre and offices.
Boann is more than just whiskey. It takes inspiration from the past and gleans insights from the present to breathe new life into an ancient Irish craft. From milling to mashing, distilling, aging and bottling, every elegant bite of The Whistler whiskey is created in the quiet of a unique family-run distillery. Every ingredient is 100 % natural and 100 % local. Every drop of water is drawn from a Boyne Valley well. Every grain of barley is supplied by local farmers.
They choose only the finest barrels to age their whiskey. Knowing what to use for aging and when to bottle is the key to making The Whistler whiskey play the right notes.
