Whisky Kilchoman Fino Sherry Matured is a limited edition and the first global release of this cask type in maturation. The whisky has been fully matured in ex-sherry Fino casks previously used by Bodega Miguel Martin in Spain, in 11 fresh casks and 1 cask after refill.
This release follows other limited editions using Kilchoman's experimental post-ageing casks, full maturation in port, madeira, sauternes, and red wine casks, among others. This particular release is limited to 10 500 bottles worldwide!
The base whisky incorporates ex-sherry Oloroso casks during maturation, a medium-dry style of sherry that adds a range of cooked and dried fruit influences to the whisky. Sherry Fino differs from this in that it is a drier, saltier type of sherry that gives Kilchoman's whisky layers of fragrant green apples that balance beautifully with the citrus sweetness, cooked fruit and smoke from the sea peat.
The bottles were bottled at 50 % alcohol and come in a gift box. No chill filtration or colouring was used in the production process.






Meikle Tòir 5 Year Old The Sherry One is a classic single malt whisky that is a true champion of the peaty endeavour. It is made from St. Fergus mainland peat and the sweet phenol content of the whisky is 35 PPM. The long 160-hour fermentation process results in a fruity spirit that is perfectly suited to maturation in Sherry's finest oak.
The whisky is produced at the GlenAllachie distillery in Speyside, Scotland. Master Distiller Billy Walker was responsible for the creation of this whisky. Using premium mainland peat to achieve an oaky, sweet and smoky style, a process of extended fermentation, heavy distillation and expert maturation takes the spirit to the top. After 5 years of patient dormancy, the spirit in each cask must meet the exacting standards of just Billy Walker and his team to make it into the bottle.
The casks used were ex-bourbon American oak casks and ex-sherry Pedro Ximenez and Oloroso. The bottles were filled at 48 % ABV and come in gift boxes.
Scottish illustrator Iain McIntosh was commissioned to create a hand-drawn illustration that captures the beautiful but rugged setting of Northern Speyside. The central peak is inspired by Ben Rinnes - the highest peak in the area.
The carefully chosen earthy colour palette highlights the whisky's smoky flavour profile and was inspired by the nature around the GlenAllachie distillery: moss, oak, heather and sky.
