Ron Zacapa XO is distilled from pure fermented virgin sugar cane. It is made from the most carefully selected rums with an average age of up to 25 years, which are then blended for over a year to achieve the perfect balance in aroma and flavor composition.
Ron Zacapa aged in robust ex-whisky American and ex-sherry Pedro Ximénez casks. Finally, it matured in French ex-cognac oak barrels.
The distillery boasts that their plantations are in the best place in the world for sugar cane production, thanks to a combination of microclimate, soil, and temperature. When it comes time for fermentation, the distillery uses its own yeast strain from pineapple. This yeast produces a specific aroma typical of Zacapa rums.
