Teeling Single Pot Still is a tribute to the long-standing tradition of Dublin distilleries - it is the first Irish single pot still distillate legally distilled in Dublin in nearly half a century.
It is created from a mash bill of 50% malted and 50% unmalted barley, which is the quintessential Irish style of Teeling whiskey. Distillation takes place traditionally in copper pot stills, and the subsequent aging occurs in a combination of new American oak, ex-bourbon casks, and sherry casks.
The aroma offers a complex palette - you can sense grapefruit, citrus, white grapefruit, hibiscus, honey, and grapes, underpinned by subtly spicy notes such as cinnamon, white pepper or bittersweet toasted almond. On the palate, flavors of lychee, white grapes, warm baked peaches, vanilla, cookies emerge, intertwining with a slight creaminess and sweet notes of maple syrup or muscovado sugar. The finish is dry, spicy, with a gentle hint of toasted almonds or maple syrup.
This whiskey is versatile - great for sipping on its own when you want to appreciate its complexity and structure (neat or with a few drops of water). On the rocks, the cool notes can be highlighted and the depth of its aroma emphasized. It also pairs excellently with classic cocktails like Old Fashioned, Manhattan, or Irish Coffee, where its balanced fruity and spicy notes can beautifully blossom.
