Description

Redbreast Pedro Ximénez Edition is a unique single pot still Irish whiskey that has been triple distilled and first matured in ex-bourbon and ex-sherry Oloroso casks.

It was then transferred into ex-sherry Pedro Ximénez casks from southern Spain, where it was matured for between 12 and 22 months. These hogshead casks, which are half the size of standard sherry casks, increase the whiskey's contact with the wood, intensifying the transfer of flavours from the Pedro Ximénez sherry.

This edition is part of the Iberian Series, which celebrates Redbreast's long association with the Iberian Peninsula and its winemakers.

Redbreast Pedro Ximénez Edition is bottled at 46 % alcohol without the use of chill filtration. It comes in a beautiful gift box.

Nose:
rich aromas of dark fruits, including plums, figs and raisins, with hints of sweet sherry, roasted nuts and a warm vanilla note
Palate:
full-bodied and syrupy with strong notes of dried fruit, especially figs and raisins, complemented by subtle spice, the sweetness of Pedro Ximénez sherry and hints of vanilla and oak
Finish:
long and lingering with a subtle sherry sweetness, gradually giving way to soft oak and warming spice
