Clairin Sajous Rum 2021
White rum Clairin Sajous is distilled at the Chelo distillery in the village of Saint-Michel de l'Attalaye in northern Haiti.
It is made from pure juice of the Cristalline sugar cane variety, a rare and old variety that the Sajous family cultivates organically on a plantation of approximately 30 hectares. The sugar cane juice ferments spontaneously and is then double distilled under the supervision of the distillery founder Michela Sajous in a Pot Still apparatus heated over an open flame.
This is a high-proof overproof rum bottled in its original, undiluted form - with an alcohol content of 54.2 %.
