Paranubes Caña Criolla is an authentic Mexican aguardiente de caña (unaged rum), made exclusively from the local variety of sugar cane "Criolla".
This distillate is produced from 100% fresh cane juice (no water, no additives), fermented for 24 hours using native yeasts and then distilled in a hybrid copper distillation apparatus with a 6-plate copper column over 9 hours. Through five selective "cuts" (85°, 80°, 65°, 20° and 5°), a balanced profile is achieved, and the final distillate is bottled at an alcohol content of 54.6% without the addition of water.
The distillate presents itself in a rich, unaged form, with spicy, pungent notes of spices on the nose, complemented by tropical nuances of ripe cane. On the palate, the taste is extremely clean, earthy, with meaty and salty hints, transitioning into an intense cane sweetness with herbal undertones – a high concentration of resin and freshness typical of the "Criolla" variety.
Paranubes is produced by José Luis Carrera in Sierra Mazateca (Oaxaca), a member of the Mazatec family that has been cultivating cane for generations. The brand was established in 2017 to preserve the traditional local aguardiente de caña and support the community. Caña Criolla is a single-varietal release, regularly created in limited batches to showcase the unique terroir of the most commonly found local cane – "criolla" makes up 85% of the original blend of Paranubes Blanco.
