Paranubes Caña Criolla is a genuine Mexican aguardiente de caña (‘undiluted rum’) produced exclusively from the local Criolla variety of sugar cane.
This spirit is made from 100 % fresh cane juice (no water or additives), fermented for 24 hours with local yeast and then distilled for 9 hours in a hybrid copper still with a six-shell copper column. Five selective ‘cuts’ (85°, 80°, 65°, 20° and 5°) are used to achieve a balanced profile, and the resulting distillate is bottled at 54,6 % alcohol without the addition of water.
The distillate is presented in a rich, unfiltered form, with spicy, grassy and pungent notes of spices on the nose, complemented by tropical notes of overripe cane. On the palate, the taste is exceptionally clean and earthy, with meaty and salty notes that give way to intense reed sweetness with herbal undertones - a high concentration of resin and freshness typical of the ‘Criolla’ variety.
Paranubes is produced by José Luis Carrera in Sierra Mazateca (Oaxaca), a member of the Mazatec family, which has been growing sugar cane for generations. The brand was created in 2017 with the aim of preserving the traditional indigenous variety of aguardiente de caña and supporting the community. Caña Criolla is a single-varietal version, regularly produced in limited batches to showcase the unique terroir of the most common local cane, ‘criolla’, which makes up 85 % of the original Paranubes Blanco blend.
