Paranubes

Paranubes is an authentic Mexican rum that represents the pure essence of the raw material and captures not only the taste but also the spirit of the place where it comes from. This unique rum is produced in the traditional way in the Sierra Mazateca region of Oaxaca, Mexico, where master distiller Jose Luis Carrera's farm grows sugar cane without the use of pesticides and fertilizers. Freshly pressed cane juice is wildly fermented in wooden vats and then distilled to final strength without the addition of any additives. This process is unique in that the fermentation never stops, allowing for continuous production and preservation of the authentic taste. Paranubes rum, also known as aguardiente de caña, faithfully reflects the taste and atmosphere of the tropical environment of the misty mountains of Oaxaca.

Paranubes originates in an area where the cultivation of sugar cane, fruit and coffee has been passed down for generations. Jose Luis, whose family has been producing aguardiente for three generations, grows different varieties of sugar cane, including Caña Criolla, on his 14 hectares. 

Jose Luis distills rum in a copper column fueled by fire from waste cane fiber, without any temperature sensors or controls. Paranubes rum is distilled to a final strength of 54% ABV, the point where the perfect balance between flavor and texture is achieved. This artisanal approach and care for every detail guarantee that Paranubes is not only exceptionally rich in taste, but also true to its origin, offering an authentic experience of true Mexican rum.
