The production of genuine white Jelínek slivovitz follows long-standing traditions. These require that the mature plum mash undergoes a three-stage distillation process, which gives the slivovitz its purity and smoothness. The stones remain in the mash throughout the process to give the resulting drink its specific tannin flavour. It is the stones in the mash, together with three years of ageing, that give the plum brandy its smooth, rounded fruit flavour with a pleasant undertone of mature distillate.
