Dom Pérignon 2015 is a vintage champagne, that embodies strength and finesse in equal measure. The origin of this vintage was marked by a significant contrast: a cool spring followed by a long heatwave and drought, which led to diversity in grape ripening depending on the vineyard location. Harvest began on September 7 under the sun, allowing the grapes to achieve exceptional quality.
The birthplace of Dom Pérignon is the former Benedictine abbey Hautvillers and is located in the heart of Champagne on a slope overlooking the Marne valley.
Dom Pérignon is the only champagne brand that offers only vintage wines and is produced only in exceptional years from two grape varieties -Chardonnay and Pinot Noir. These come exclusively from the best harvests and solely from 17 vineyards classified as Grand Cru and age for at least 8 years.
In the glass, it presents as an aromatically complex experience: dark and roasted notes of cocoa and roasted nuts blend with delicate floral nuances like linden blossom, jasmine, and peony. There is a balance of spicy elements (e.g., anise, cardamom), freshness of citrus, and hints of exotic fruit, such as green papaya.
The taste is full, structured, and yet elegant. Fruits like peach, nectarine, and citrus intertwine with a delicate bitter structure - lemon zest, minerality, and smokiness emerge throughout the spectrum of the aftertaste following the bubbles. The finish is long, clean, with a salty mineral tone and a subtly spicy, “ripe” undertone that steelily supports the entire flavor.
