Clairin Sonson 2022
Clairin Sonson is a Haitian agricole rum that comes from the village of Cabaret, located in the Archaïe region northwest of Port au Prince. It is a vintage 2022 and is made from local sugarcane of the Madame Meuze variety, which is grown on a 25 ha plantation alongside banana trees and other types of fruit.
After harvesting, the sugarcane is pressed, then the juice is slowly reduced to obtain syrup. This is then fermented using natural yeasts. This non-hybridized sugarcane has imparted vegetal and slightly mineral notes to the rum. Distillation is carried out by Stephan Kalil Saoud using the pot still method.
The rum is bottled at 51% alcohol content.
