Extra dry Italian prosecco Le Contesse Conegliano Valdobbiadene Prosecco Superiore DOCG ExtraDry made from the Glera grape variety, hand-picked in the wine-growing region of the Conegliano Mountains, Italy (200 m above sea level).
After manual harvesting, the grapes undergo cold static decantation only by light pressing and cleaning of the must. A portion of the must is then stored refrigerated while the remainder of the mixture fermentes at a controlled low temperature. The second fermentation takes place in pressurized vessels in the presence of selected yeasts, with the help of which this sparkling wine acquires its soft and long effervescence. In the final step, the wine is bottled and left to ripen directly in the bottle in temperature-controlled warehouses for several more weeks.

This sparkling wine was made by secondary fermentation using selected yeasts under controlled temperature. The basis is a manual selection of grapes harvested in the second half of September from the Glera variety from the Italian wine-growing region of Prosecco di Conegliano and Valdobbiadene, also inscribed on the UNESCO World Heritage List.
