Don Julio Añejo is made from agave grown in the Jalisco region of Mexico. The production process of Añejo differs from that of Silver tequila, mainly due to the maturation in oak barrels.
After the agave plants are harvested, the piñas are carefully prepared and cooked to make them ready for fermentation. After fermentation, they are distilled to produce pure alcohol. This is followed by the crucial maturation phase, during which the tequila is placed in oak barrels, where it acquires its colour, flavour and aroma. The length of maturation influences the final character of the tequila. Don Julio Añejo is aged for at least 1 to 3 years, which allows it to develop a complex and harmonious profile.
Notes of lime, grapefruit and tangerine predominate in the tequila, complemented by caramel. It has a full-bodied flavour with a deep character. Sweet fruits such as strawberries and cherries with vanilla and butter predominate. Very long honey finish with a little spice.
Recommended to serve on its own at room temperature or chilled.
