Don Julio Añejo tequila is made from agave grown in the Mexican region of Jalisco. The production process of Añejo tequila differs from that of Blanco tequila, primarily due to its ageing in oak barrels.
After harvesting, the agave piñas are carefully prepared and cooked to make them ready for fermentation. Following fermentation, the spirit is distilled to obtain a clean alcohol. This is followed by the crucial ageing stage, during which the tequila is placed in oak barrels, where it develops its colour, flavour and aroma. The length of ageing plays a key role in shaping the final character of the tequila. Don Julio Añejo is aged for at least 1 to 3 years, allowing it to develop a complex and harmonious profile.
The aroma is dominated by notes of lime, grapefruit and mandarin, complemented by caramel. The palate is full-bodied and expressive, with sweet fruit flavours such as strawberries and cherries, layered with vanilla and butter. The finish is very long and honeyed, with a subtle touch of spice.
