The taste of Mermaid Zest Gin is harmonious and well balanced. Citrus notes dominate, especially the taste of lemon and lime, which add freshness and lightness to the drink. Complementary herbs and spices add complexity and spiciness. There is a hint of sea salt on the finish, which is a hallmark of Isle of Wight gin.

High quality botanicals are used to make the gin including juniper, sea heather, lemongrass, lime and orange. These ingredients are carefully selected to ensure the quality and uniqueness of the gin. The botanicals are macerated in alcohol and then the macerate is distilled in a traditional pot still.
