Dignitat

Dignitat is a Spanish brand of sparkling wines from the DO Cava region in Catalonia, produced using the traditional method of secondary fermentation in the bottle. It uses a classic blend of Xarel·lo, Macabeo and Parellada varieties, which predominate in various variants (Brut, Organic Brut, Brut Nature and Semi Sec). The wines have a standard alcohol content of 11,5 % and varying residual sugar content depending on the style.

The grapes come from the DO Cava region, where Spain's most renowned sparkling wines are produced. The blend may vary slightly, for example Brut has ~40% Xarel·lo, ~35% Macabeo and ~25% Parellada, while the Brut Nature version has approximately 45% Xarel·lo and a very low sugar content (only 0.8 g/l).

Maturation on the lees in the bottle takes approximately 10 to 14 months, depending on the variant selected (e.g. 14 months for Brut Nature). This process greatly influences the fineness of the bubbles, the complexity of the aroma and the smooth final character.
