Clairin Sonson is a Haitian rum that comes from the village of Cabaret, located in the Arcahaie area northwest of Port au Prince. It is a vintage 2020 and is made from local sugarcane of the Madame Meuze variety, which is grown on 25 hectares.
After harvesting, the sugarcane is pressed, and the juice is slowly reduced to obtain syrup. This is then fermented using natural yeasts. This non-hybridized sugarcane has given the rum vegetal and slightly mineral notes. Distillation is carried out by Stephan Kalil Saoud using a pot still.
The rum is then bottled at 51.1% alcohol content. The bottle comes in gift packaging.

Taste: fruit, sugarcane, sweet wood, fruit
Finish: medium-long, pleasant, pepper, ginger, spice
