Clairin Sonson is a Haitian rum that comes from the village of Cabaret, located in the Archania region in the northwest of Port au Prince. It is 2020 and is produced from the local sugar cane variety Madame Meuze, which is grown on 25 hectares.
After harvesting, the cane is pressed, then the juice is slowly reduced to obtain a syrup. It is then fermented using natural yeast. This non-hybridized sugar cane gave the plant plant and mild mineral tones. Distillation is performed by Stephan Kalil Saoud using pot still.
Subsequently, the rum was filled into bottles with an alcohol content of 51.1 %. The bottle is in a gift box.
Color: crystal with subtle pink-green highlights
Aroma: fresh, herbs, grass, basil, lemon grass
Taste: fruit, sugar cane, licorice, fruit
Finish: medium long, pleasant, peppers, ginger, spices
