Clairin Sonson is an Agricole Rhum, which is one of the new arrivals from Haiti. It is produced by Stephan Kalil Saoud from the juice of the Madame Meuze sugarcane variety, which covers 60 acres of land and is non-hybridized. This gives the distillate plant-like and slightly mineral notes.
Along with sugarcane, bananas and other fruit trees are also grown there, and the view of the diverse field only highlights the vibrancy of the entire country. Fermentation occurs completely spontaneously and open flame is used in pot still distillation. The rum has the aroma of freshly cut grass with a hint of basil and citrus. Similarly, the taste is very smooth, with a note of lemongrass, and sweet from sugarcane syrup.
