Sake is a traditional Japanese alcoholic beverage that has held a special place in Japanese culture for centuries. It is often referred to as rice wine, but in reality, it is produced through a process similar to brewing beer – fermenting rice that contains starch.

History and production of sake

The first records of sake date back to the 3rd century. It is made from a special type of rice with a high starch content, which is carefully polished. The purity of the water and the fermentation process itself play a crucial role, during which starch is converted into sugars and then into alcohol. The result is a drink with an alcohol content of around 12–16%.

Styles of sake

Sake comes in several styles, depending on the degree of rice polishing and the production method:

Junmai – pure sake with no added alcohol, offering a rich and bold flavor.
Ginjo / Daiginjo – premium sake with a delicate, refined aroma, made from highly polished rice grains.
Nigori – cloudy, sweeter sake with a smooth, creamy texture.

How to enjoy sake

Traditionally, sake is served in small ceramic or wooden cups called choko, with a typical serving size of about 5 cl. Sake can be enjoyed cold or warm – lighter varieties shine when chilled, while fuller-bodied styles are often served warm. It pairs wonderfully with sushi, fish, and other Asian dishes.
