Labourdonnais Raph Dodo 5 years old
Raph Dodo has undergone a 5-year aging process in ex-cognac barrels at the amazing Domaine de Labourdonnais on the island of Mauritius.
This tropical aging gives the rum a distinct flavor with hints of vanilla and sweet spices, complemented by notes of citrus and dried fruits like apricots and figs.
Sugar cane is harvested to produce fresh sugarcane juice. Fresh sugarcane juice is filtered to remove any small fibers. Then, yeast is added to the juice and maintained in a tank for 44 hours.
Once the desired yeast concentration is reached, part of the mixture is transferred to a fermentation tank and fresh juice is added. The fermentation process lasts for 35 hours.
The next step is distillation. The distillation column has a total of 39 chambers.
The desired distillate is collected in three different chambers. The lowest chamber contains heavy distillate, while the highest chamber contains lighter distillate.
The final product leaves the column, passes through a condenser, and is collected in 25,000-liter stainless steel tanks.
Bottles are filled with an alcohol content of 40% with a volume of 0.7 L and are delivered in gift cartons. The bottles have an unusual shape of the dodo bird, which lived on the island of Mauritius.
