So how did an old home remedy become one of the world's most popular liqueurs? Baileys is a relatively young drink, with its history beginning in 1973. David Dan and his colleagues were thinking about how to bring something unique to the world. His colleague David Gluckman came up with the idea of combining alcohol with the image of Ireland – a green country filled with pastures and grazing cattle. They decided to combine Irish whisky with cream.

They bought a bottle of Jameson and some cream from a shop across the street and mixed the two ingredients in a blender. The flavour was not particularly impressive, so they added sugar, but something was still missing. They returned to the shop and found the answer in the form of cocoa powder. The young customers finished their glasses but said they preferred beer with vodka or whisky and considered the drink more suitable for women.

All that remained was to find a suitable name. The Baileys hotel provided the inspiration. The creators spotted it across the street while discussing possible names. The R.A. Bailey signature on the bottle is inspired by a legend about two brothers with the initials R. and A. who promised their dying father that they would work together. One sold milk while the other produced whisky.

The key to producing Baileys is the combination of tradition and innovation. The cream is made from milk produced by Irish cows, sometimes referred to as the Baileys Ladies, raised on local farms. Around 220 million litres of milk are used in Baileys production each year. Distilleries select high-quality triple-distilled whisky, which is then blended with cream and other spirits. Cocoa and vanilla are added to create Baileys' famous chocolate flavour. Everything is combined with sugar to create the finished liqueur. Because whisky itself acts as a preservative, no chemicals are added to preserve the cream. The exact process and proportions of the ingredients remain secret.
