Yellowstone Special Finishes Collection: Toasted is a Kentucky Straight Bourbon that builds on the classic Yellowstone profile and adds a new layer of complexity through sophisticated ageing in toasted wooden staves.
This bourbon has 50 % alcohol and is the first edition of the ‘Special Finishes’ series, which explores what happens when bourbon aged in the standard way is aged with special finishing on wooden elements.
This bourbon is produced in the USA, in the state of Kentucky, at the Limestone Branch Distillery. It is made from Yellowstone's standard mash bill: mainly corn, with the addition of rye and malted barley. The bourbon is aged for approximately 4 years in oak barrels, followed by a finish using a combination of five different toasted wooden elements (‘staves’): High Toast, American Oak Double Toast, High Vanilla, Rickhouse and Spice Rack staves. These additional woods add extra character, colour and aroma.
The aroma reveals notes of toasted caramel, vanilla and autumn spices, with a subtle hint of cinnamon. During tasting, the flavour develops with walnuts, caramel, black tea and white pepper. The finish brings chocolate notes, tobacco and a clean oak impression. The body is medium-full, with 50 % alcohol providing a stronger base, but it remains well integrated.
We recommend serving it neat or with a few drops of water to open up the subtle notes of burnt wood. A tulip glass or Glencairn will enhance the aromas. It can also serve as an interesting bourbon for mixed cocktails where you want the woody and spicy notes to complement the other ingredients.
