The Black Gate Distillery in New South Wales not only produces excellent Australian whiskey - it also produces fantastic Australian rum! And you're in luck, because the independent bottler That Boutique-y Rum Company brings their pot still rum right to you!

The small Black Gate Distillery is run by Brian and Genise Hollingworth. Their rum is made from molasses, which comes from Queensland. It is fermented with the help of special rum yeasts for two whole weeks and then distilled in pot stills boilers. It is aged for 3 years in oak barrels before bottling. Batch 1 is a release of 220 bottles.

Aroma: oil smoke, liquorice, flowing caramel and molasses
Taste: again reminiscent of oil, oatmeal and oak
Conclusion: brown sugar, cassia and black pepper
