Providence 3 Year 2020
This Providence 3 Year 2020 represents a second matured rum from the distillery. The uniqueness of this rum lies in its processing based on traditional methods. It is made from syrup of the original sugarcane variety Cristalline. The sugarcane comes from the fields of Michel Sajous, located in Saint-Michel de l'Attalaye.
The de Port-au-Prince distillery also revives the tradition of double distillation in Haiti. Fermentation is carried out using selected yeasts, allowing for the development of a distinct aromatic complexity. Rums are produced in a Müller pot still, leaving the first batch with 25-30% ABV and the second batch 72-78% ABV. This version aged for 3 years in ex-Providence rum barrels.
By aging in the distillery's barrels, this bottle fully expresses the brand's identity. These barrels are made from new American oak. The barrels were filled three times and charred three times over two years to allow the wood to "get used" to the rum, enabling it to mature gently at its best quality. This new release stands out for its vibrant fruity, rich and spicy notes.
Bottles were filled with an alcohol content of 52%, with a volume of 0.7 l and come in gift boxes.
