The main ingredients of the rum are sugar cane and molasses. Molasses is a sweet and sticky residue from crushed and heated sugar cane, traditionally harvested by chopping with machetes.
Fresh plants must be processed within one day. The resulting intermediate product is boiled to produce sugar and the aforementioned molasses. The second boiled molasses is mixed with water and yeast.
It ages for 3 years in barrels made from French Limousin oak, which were originally used for aging Chivas Regal whisky. Vanilla aroma, caramel flavor, coconut, hints of cardamom, orange, bananas, ginger, and a subtle alcoholic aftertaste.
