A Distillery on the Wild Atlantic Coast

Clonakilty Distillery is located on the south-west coast of Ireland in County Cork, in the town of Clonakilty, a place known for its strong traditions and independent spirit. This region is often referred to as “The Rebel County” – a place where things are done differently. Here, on the rugged Atlantic coastline where thousands of miles of ocean meet the land, one of the most exciting modern Irish distilleries was established. The surrounding environment plays an important role in the whiskey-making process. Salty ocean air, soft rain, and sea mist influence the conditions in which the whiskey matures in oak casks. This unique maritime character gives Clonakilty whiskey its distinctive smoothness and complexity. Nine Generations of the Scully Family

Behind the distillery stands the Scully family, who have been farming the same land for more than nine generations. Their vision was to create an Irish whiskey closely connected to the local landscape and natural conditions of the region. The founder of the distillery, Michael Scully, decided to harness the potential of the local soil, climate, and traditional techniques to produce a whiskey with authentic character. The barley used in production comes directly from the family farm by the ocean or from local farmers in County Cork. In this way, the whiskey reflects the place where it is made and carries the character of the surrounding landscape.

A Unique Production Process

Clonakilty Distillery places strong emphasis on a craft approach to production. Every step of the process is carefully controlled to create a spirit with a rich and complex flavour profile. Fermentation lasts more than 100 hours, significantly longer than the industry standard. This extended fermentation allows natural yeast to develop a wider range of aromatic compounds. Distillation takes place in traditional long-neck copper pot stills and the spirit is triple-distilled. This method is typical of Irish whiskey and produces a lighter and smoother spirit. Before being transferred to casks, the new make spirit is diluted with pure spring water drawn from a deep artesian well in the local rock formation.

Maturation Influenced by the Atlantic Ocean

Clonakilty whiskey matures in warehouses overlooking the Atlantic Ocean. The casks are exposed to maritime air and ocean climate, which gradually influences the character of both the wood and the spirit. After maturation, the whiskey is slowly adjusted to bottling strength. This process, known at the distillery as the “gentle cut”, can take up to two weeks and allows the flavours to integrate harmoniously. All bottling is carried out directly at the distillery to ensure complete quality control and authenticity.
