The barley used in production comes directly from the family farm by the ocean or from local farmers in County Cork. Unique Production Process

Clonakilty Distillery places great emphasis on a craft approach to production. Every step of the process is carefully monitored to create a distillate with the richest flavor profile possible. Fermentation lasts for more than 100 hours, which is significantly longer than the industry standard. Longer fermentation allows natural yeasts to develop a wider range of aromatic compounds. Distillation takes place in traditional copper pot stills with long necks, and the distillate is triple distilled. This process is typical for Irish whiskey and results in a smoother and more elegant distillate. Before being placed in barrels, the new distillate is diluted with pure spring water sourced from a deep artesian well in the local bedrock.

Maturation Influenced by the Ocean

Clonakilty whiskey matures in warehouses located right by the Atlantic Ocean. The barrels are exposed to sea air and ocean climate, which gradually influences the character of the wood and the distillate itself. After maturation, the whiskey is slowly adjusted to its final strength. This process, referred to as “gentle cut” at the distillery, can take up to two weeks. Gradual dilution allows for a harmonious blending of flavors and preserves the natural character of whiskey. The entire bottling process takes place directly at the distillery, ensuring quality control and authenticity of every product.
