Herberry Gin uses a traditional London dry style with a modern approach — 22 days of maceration of local herbs (mint, lemon balm, chamomile, lavender, and others) in phyto-alcohol to release essential oils and aromas. This is followed by vacuum distillation at a low temperature, which gently preserves the aromatic substances. After distillation, the gin is aged in stainless steel tanks for another 22 days to harmonize the flavors before final filtration and bottling.
The aroma is distinctive, with notes of juniper, fresh mint, delicate lemon balm, and deep, subtle herbs such as lavender, chamomile, and sage — a mountain meadow and a floral breeze.
The gin is smooth and subtly dry on the palate, with a structure dominated by juniper, cool herbal notes of mint and lemon balm, complemented by lavender flowers and delicate earthy spring herbs. A harmony of freshness and earthiness. The finish is medium-long, with a herbal aftertaste and a slightly warming sensation. It leaves a clean impression without any noticeable alcohol or sweetness.
The bottles are filled with 44 % alcohol and have a volume of 0,7 l.
