JAUJAU I. 2018 AOP Côtes du Roussillon Villages is a French red wine made from grape varieties 50% Syrah and 50% Grenache Noir, hand-picked, from the AOP Côtes du Roussillon Villages wine region, France. This important wine region, covering approximately 100 hectares, has been cared for by Cistercian monks since the 12th century and is now owned by the Dauré family. The region offers ideal climatic conditions for viticulture: sunlight allowing the slate soil to retain heat during the day and provide it to the vineyards at night, as well as the Mediterranean Sea, which tempers summer heat with a year-round northern wind for healthy grape ripening.
The grapes are fully destemmed after hand-picking. They are macerated for 2 weeks before pressing and then undergo malolactic fermentation. Two-thirds of the wine is aged for 9 months in wooden barrels. The remainder is kept in steel tanks, and at the end, both parts are blended into a common mixture.

Taste: strong, pronounced, dense with a firm structure, with plenty of fresh notes, elegant and silky tannins
Finish: sophisticated red wine with a full body
