JAUJAU I. 2018 AOP Côtes du Roussillon Villages is a French red wine made from grape varieties 50% Syrah and 50% Grenache Noir , hand harvest, wine-growing area AOP Côtes du Roussillon Villages, France. This important wine-growing area of approximately 100 hectares has been cared for by Cistercian monks since the 12th century and is now owned by the Dauré family. The area offers ideal climatic conditions for viticulture: sunlight allowing the slate subsoil to retain heat during the day and provide it to the vineyards at night, as well as the Mediterranean Sea, which temperes the summer heat with year-round north wind for healthy ripening of grapes.

The grapes are completely peeled after manual harvesting. It is macerated for 2 weeks before pressing and then travels to the malolactic fermentation phase. Two thirds of the wine is aged for 9 months in wooden barrels. The residue is left in steel tanks and finally the two parts are mixed together.

This wine goes well with ripe cheeses, grilled meat and vegetables.
