Aultmore is a traditional Scottish distillery from the Speyside region, located near the town of Keith in Banffshire. Its name comes from the Gaelic An t-Allt Mòr, meaning “the great stream” – a reference to the Auchinderran Burn, which still serves as a vital source of pure water for the production of whisky.

The history of Aultmore distillery

The distillery was founded by Alexander Edward in 1895–1896 as his first purpose-built distillery. Production officially began on 24 May 1897, and within just one year the capacity was doubled, reflecting strong demand for its spirit. Aultmore, however, also faced challenging periods, including economic downturns, the effects of the Pattison Crash and production interruptions during the First World War.

In 1923, the distillery was acquired by John Dewar & Sons and later became part of Distillers Company Ltd. Since 1998, Aultmore has been owned by the Bacardi group through Dewar’s, which remains its current owner.

Production and character of Aultmore whisky

Aultmore follows traditional Speyside production methods. It operates four stills (two wash stills and two spirit stills), and fermentation takes place in wooden washbacks, contributing subtle herbal and woody nuances to the flavour. Relatively long fermentation times and increased reflux during distillation result in a cleaner and more complex spirit.

The flavour profile of Aultmore whisky is typically fresh, clean and elegant. Notes of delicate fruit, flowers, herbs and oak are complemented by gentle sweetness and a light spicy background. It is a non-peated Speyside whisky that focuses on balance and clarity rather than smoky intensity.

Aultmore in blended and single malt whisky

For decades, most of Aultmore’s production was used as a blending malt, particularly for well-known blends such as Dewar’s and other premium blended whiskies. Its own official single malt releases began to appear more prominently in the modern era – the first official 12-year-old expression was released in 2004, followed by older age-stated editions.
