Sarajishvili XO
Sarajishvili XO is the pinnacle expression of Georgian brandy, combining tradition and elegance in a stunning package. It is a selected composition of distillates from local grape varieties, aged in oak barrels, with a distinctive dark amber color and velvety taste.
Sarajishvili XO consists of at least 15 different wine distillates, carefully selected from the rare reserve of David Sarajishvili. These distillates age in oak barrels for an average of 14 – 18 years, with some components maturing for up to 30 years. The result is a rich, complex composition with a perfect balance between fruity and spicy notes.
The color palette is dominated by a dark amber to golden hue with a subtle sheen, foreshadowing the depth of aroma and flavor. On the nose, pleasant notes of oak, vanilla, and chocolate emerge, underlined by delicate hints of almonds and leather. On the palate, the brandy presents itself as deeply velvety, smooth, and well-structured – a harmonious symphony of spices, sweet chocolate undertones, and oak elegance.
The Sarajishvili brand has deep roots – its founder David Zakharyevich Sarajishvili laid the foundations of the first classical technology for producing brandy in Georgia in 1884. Just a few years later, in 1887, the first brandy was produced in Tbilisi according to the French model, making Georgia the second country in the Russian Empire, after France, to legally use the designation "cognac."
