The rum brand Sister Isles is produced by the Spanish company The Haciendas Rhum Company Spain, S.L., based in Madrid.

The production process of these rums is unique in that it combines traditional Caribbean methods with European winemaking artistry. The rum is distilled from molasses on the islands of Saint Kitts and Nevis, where it ages for over 6 years in oak barrels. It is then transferred to the valley of Duero in Spain, specifically to Hacienda Zorita, where it matures for an additional 2 to 4 years in barrels previously used for red wines. The final aging takes place in barrels that held sweet wines, such as Moscatel or Pedro Ximénez, in Montilla in the province of Córdoba.

This triple aging process gives Sister Isles rums a complex and rich flavor profile, resulting from the combination of tropical and continental aging. The rum first ages in the Caribbean, then in barrels that held red wines in Spain, and finally in barrels that held sweet wines.
