KI NO BI, which translates to "the beauty of the seasons", is a craft gin produced at the first distillery in Japan dedicated exclusively to gin production – The Kyoto Distillery. This distillery was founded in 2014 in the heart of Kyoto by three founders: David Croll, Noriko Kakuda Croll, and Marcin Miller, who aimed to combine the rich tradition of this ancient city with modern innovation.

The Kyoto Distillery is not just a distillery, but a symbol of the revival of traditional craftsmanship with a focus on the highest quality. Kyoto, known for its unique culture and artisanal traditions, provides the ideal environment for producing this exceptional gin. The distillery uses pure and soft water from Fushimi, a region famous for its springs, which are considered to be among the best in Japan. This water plays a key role in the distillation process and contributes to the smoothness and purity of KI NO BI.

The production process at The Kyoto Distillery is exceptionally refined. The botanical ingredients, which are predominantly locally sourced, are divided into six categories called "6 Elements." Each of these categories is separately macerated in rice distillate and distilled to achieve maximum purity and harmony of flavors.

The distillery also collaborates with local artisans and workshops that have been in Kyoto for generations. The label and packaging of KI NO BI are inspired by the traditional karakami pattern, created by the Kira Karacho workshop, the oldest karakami workshop in Japan, which was established in 1624.

Thanks to this close collaboration with local experts and the use of top-quality ingredients and technologies, KI NO BI Kyoto Dry Gin has become synonymous with perfection and has won numerous prestigious awards at international competitions. This gin is not just a drink, but an expression of the essence of Kyoto – a city where the old meets the new and where every detail matters.
