The distillery City of London opened on December 20, 2012, inside the cocktail bar Jonathan Clark on Bride Lane, London.

Gin production began in a pair of 200-liter copper stills named Clarissa and Jennifer (named after the BBC food show The Two Fat Ladies). The first gin, true to its roots, was the classic London Dry Gin. In 2016, a larger 500-liter pot was purchased to increase production. This new larger model was unveiled on the day of the 90th birthday celebration of the queen and was accordingly named Elizabeth.

Since then, they have added the very popular Sloe gin, Old Tom gin, Christopher Wren gin, and also contemporary flavors like Six Bells Lemon Gin, Murcian Orange Gin, and Rhubarb and Rose Gin.
